A Match Made in Heaven

Beringer®, Napa Valley’s oldest continuously operating winery, has bottled four wines exclusively for Sandals to complement its gourmet cuisine, including a Cabernet Sauvignon, Merlot, Chardonnay, and Pinot Grigio.

While the restaurant staff can easily recommend the perfect wine to pair with your meal, here are some suggestions to know before you go. Or, try these couplings at your next dinner party:

Seared Stuffed Chicken Breast

Chicken breast, callaloo stuffing, simmered in light jerk sauce; serve with mashed potatoes and market vegetables

Wine suggestion: Glass of Beringer Stone Cellars Chardonnay – clear, light brass color. Intriguing aromas, remarkably complex; apples, figs, oranges, a hint of oak; brown spices like nutmeg and cinnamon mingle with dark, leafy fresh herbs. Big and mouth-filling, it is saved from unctuousness by a tart acidic snap unexpected in a California wine. Just off-dry, fruit sweetness nicely balanced by crisp acidity. Juicy mandarins, a slight, pleasant orange-peel bitterness and a hint of brown sugar persist in a long finish.

Filet au Poivre

Peppercorn-Crusted Filet Mignon, Red Wine Demi-Glace, Mixed Greens Salad, Pommes Frites

Wine suggestion: Glass of Beringer Stone Cellars Merlot – dark, violet color with deep black tones, intense aromas with a soft generous texture and concentrated flavors. Ripe plum and chocolate flavors with a very soft, supple mouth feel with excellent structure and length, offers blackberry fruit flavor with a slight earthy tone and notes of spicy black pepper. Together they give birth to a complex blend of aromas and flavors – a wine with excellent concentration, balance and freshness.

Linguine al Salmone Affumicato

Linguine pasta tossed with smoked salmon and mint flambé with vodka, finish with light cream sauce

Wine suggestion: Glass of Beringer Stone Cellars Pinot Grigio – straw-yellow with pale green edges in color. The nose is filled with notes of citrus and tropical fruit layered with subtle floral nuances. The palate echoes the nose with bright and fresh tropical fruit flavors that lead to a crisp acidity on the long refreshing finish.

Kalbi Shrimp Marinated in Special Sauce

Served with Pepper Infused Hoisin and Black Bean Sauce

Wine suggestion: Beringer Moscato – Peach-scented and honeysuckle aromas with fresh, sweet flavors of juicy stone fruit, honeydew melon, Fuji apple and ripe pears. It is beautifully balanced with crisp acidity and a clean finish.
